Local owner Lorenda Tiscornia is putting the final touches on her new Great Harvest Bread Company bakery, which is set to open in Jacksonville on Jan. 15. The new bakery will be located at 11526 Lake Mead Ave., just off of Baymeadows and Gate Parkway near Atlantic Coast High School and in front of the new Mayo Clinic by I-295. It will offer local residents a great lunch location with freshly made sandwiches and a hot spot for daily baked breads and goodies.
The locally owned, whole grain family bakery will provide high quality, made from scratch products. Great Harvest bakeries grind premium Montana wheat berries using a classic stone mill into whole-wheat flour daily to ensure freshness, nutrition, and flavor. Great Harvest’s breads are also made without preservatives, additives or dough conditioners.
“My mission is to educate consumers about the joys of bread making and phenomenal tasting products,” says Tiscornia. “We believe it is all about the customer experience and we want to provide a comfortable social gathering place away from home and work, a neighborhood spot.
Tiscornia has lived in Jacksonville for 11 years. She has worked mostly in education with roles including classroom teacher and even school superintendent. She believes opening her own whole grain bakery will allow her to connect with the community in another meaningful way.
The opening day menu will include delicious bread like Honey Whole Wheat, a signature bread crafted from five simple ingredients: water, honey, salt, fresh yeast, and wheat flour. Also included will be a rotating selection of specialty breads: Cinnamon Chip, Cheddar Garlic, Pumpkin Chocolate Chip, Coconut Chip, and Rosemary Bleu among others. They will also offer a variety of other items including granola, oatmeal and pancake mixes, and an assortment of cookies, muffins and scones with seasonal berries. Each day, she plans to offer between six and 10 varieties of bread.
“It is my goal to make a difference in our community by helping people make a more conscientious effort to reject artificial ingredients for authentic high quality-freshly milled wheat products,” adds Tiscornia. “Every morning we will mill wheat berries that will allow us to bake phenomenal bread and sweet treats that will ‘knock your flip flops’ off.”
A fresh, made-to-order sandwich menu will be available daily offering many choices including Baja Chipotle Turkey, Italian, Three Seed Veggie Hummus, Roast Beef Chimichurri, and Big Sky Chicken Salad, among others. Breakfast biscuits, scones prepared with seasonal berries or fruit, and a special blend of coffee that the bakery is roasting in-house will be available each day.
Tiscornia wants to be involved in the community and plans to hold special monthly events by partnering with local businesses. The bakery also wants to work with area non-profits and schools to help raise money for important community services.
